Why this easy avocado recipe saves my (vegetarian) bacon
I am all about the easy. Of course, some things are worth waiting for, and yes, good things come to those who wait, but my children have not (yet) got those memos, so an easy avocado pasta recipe rescues me several times a month.
Sometimes you need something you can rustle up in 10 minutes flat and mix up, depending on what you've got in your kitchen. Enter: my easy peasy avocado pasta recipe.
Yep, you read that right! Just six ingredients. And, for the base recipe, only one of them is fresh, which means this is an excellent store cupboard surprise when you're hearing the "I'm hungry"s from all corners of the kitchen....unless you're like me, and you ban them from the kitchen during the witching hour.
But don't let its store cupboard nature fool you, with the main ingredient being avocado, this is also a reassuringly healthy dish to serve up to your little people...or to grab for yourself as a weekday lunch.
Yes, but are avocados healthy?
In a word: yes! Avocados are definitely healthy...
In fact, avocados defined as nutrient dense foods - having one half of a standard-sized avocado actually counts towards your five a day.
They're also a great source of vitamin E, folate and monounsaturated fat. Add to these (already impressive) credentials, an avocado also contains more soluble fibre than other types of fruit and it's got tons of important minerals, like iron, potassium and copper. Not bad for a 10 minute lunch ;)

Oh, and one last thing: this is a seriously quick recipe, taking only 10 minutes from flicking the kettle on to flinging- I mean, ceremoniously serving on the table. Plus, it doesn't take any fancy equipment...although if you have a blender, it'll make it even quicker!
At the end of this recipe, I've included some suggestions for tasty toppings...deciding which you you want will probably be the most time-consuming part of the whole recipe!

Here it is: easy avocado pasta recipe
Pasta for 1
1 ripe avocado
Handful pine nuts
Tsp lemon juice
1 garlic clove
Plenty of black pepper
- Cook pasta (reserve a few spoonfuls of the pasta water).
- De-stone avocado
- Spoon flesh into blender (or a bowl, if you don't have a blender).
- Add rest of ingredients (keep some of the pine nuts aside).
- Blend or mash with a fork (add the pasta water if it need to be loosened a bit).
- Toast the remaining pine nuts
- Drain the pasta
- Mix the avocado mixture through the pasta
- Top with nuts + any other toppings
